We feel very much at home in Spain. Especially because food and drinks with family and friends are very important to the Spanish...and to us as well! Sundays for instance are for lunches with extended family at the many ´ventas´, roadside restaurants, or you could go to the authentic fishermen´s area El Palo in Málaga where the sardine skewers are prepared on little bbq boats in the sand.
We love to share a meal with our guests, family and friends. One of our favourite recipes to make is a well filled paella.

Recipe for paella for 8 people:

2 large onions, 2 large tomatoes, half a bulb of garlic, chopped. Slice chicken breast and white fish into pieces, season them and fry in oil. Fry the Gambones shortly in the same oil after having taken off their heads. Add garlic, sea salt and lemon juice to the gambones. Meanwhile make a fish- and chicken stock in a small pot with 2 stock cubes, a litre of water, (fresh) thyme and the gambone heads. Keep the fried chicken, fish and gambones separate and fry onions and garlic in the same oil. Add a good dash of dry sherry. After 5 minutes, add the tomatoes, 5 minutes after that the rice and fry for a short while. Add stock after sifting and then add saffron or paella seasoning. Add vegetables such as peas and red bell pepper. Simmer for 7 minutes. Add the fried chicken and fish and simmer for 3 more minutes. Meanwhile preheat the oven. Put your paella in a paella pan and decorate with the fried gambones and some clams in their shells. 10 Minutes in the oven at approximately 200 degrees Celcius. Sprinkle with small pieces of red bell pepper, parsley and lemon slices and serve.
